To make the filling:

In a large bowl whisk vanilla, eggs, and sugar till well combined. Add in the ricotta cheese and chocolate chips and mx well then keep aside.

To make the Crust:

In a large bowl mix baking powder, sugar, and flour. Add in the shortening and mix till the mixture forms coarse crumbs. Add in vanilla and beaten eggs and mix till dough is formed. Cut the dough into 4 equal parts and cover with plastic. Keep in the fridge for about 30 minutes.

Set your oven temperature to 325 degrees F (165 degrees C) and preheat.
